  3. Add andouille, tomatoes, broth and rice. Bring to a boil.
  4. Reduce heat to low-med and cover. Simmer for 25-30 minutes (or until rice is tender).
  5. Salt & pepper to taste.

To make classic jambalaya, you will need: The Cajun/Creole "holy trinity": Celery, onion and green bell pepper (although for some extra color, I've also used red and yellow bell peppers). Feel free to add more or less of either, depending on your heat preferences. The base ingredients for these two classic Creole dishes are almost identical. The main difference is that gumbo incorporates a roux, or some sort of thickener, and is served either by itself, almost like a chili, or over a bed of rice. Jambalaya is more like arroz con pollo, in that the rice and other ingredients cook together.
