  2. In a bowl, mix Chicken, lime juice from 2 limes, onion, corn, basil, cilantro, red pepper and garlic salt. Set aside.
  3. Grease cupcake tins.
  4. Take Phyllo dough or Soft Torillas to make cups inside of cupcake tin. Make about 12 cups (or 2 cupcake tins).
  5. Add Refried beans to the first layer.
  6. Add cheese as the second layer.
  7. Add Chicken mix as third layer.
  8. Cook in oven for about 20 mins. Top with Sour Cream and Guacamole.

In a large shallow bowl, combine lime juice, oil, garlic, cumin, salt, chili and cilantro; mix together. Add a drizzle of olive oil to lightly coat the bottom of the pan. The base of this burrito bowl is my Cilantro Lime Rice. I brown the rice in hot oil then toss in lot's of garlic.
